- 2 tbsp cocoa powder (unsweetened)
- 1 ½ cups granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 cup buttermilk, room temperature
- ½ cup unsalted butter, room temperature
- 2 large eggs, room temperature
- 1 tbsp vanilla extract
- 1 tbsp white vinegar
- 2–3 tbsp blue food coloring (adjust for desired shade)
- 8 oz cream cheese, softened (for frosting)
- 4 cups powdered sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
- ½ cup unsalted butter, softened (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottom with parchment paper for easy removal.
- Sift together the flour, cocoa powder, baking powder, and baking soda in a medium bowl.
- Cream the butter and sugar in a large bowl until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
- Mix in the vanilla extract and blue food coloring until evenly combined.
- Alternating with the buttermilk, slowly add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.
- Stir in the vinegar at the end to help activate the baking soda for a perfect rise.
- Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
- For the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and fluffy.
- Assemble the cake by spreading a layer of frosting between the cooled cake layers. Frost the top and sides generously.
- Decorate with sprinkles or edible pearls for a special touch!
