  • 2 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 1 tbsp white vinegar
  • 23 tbsp blue food coloring (adjust for desired shade)
  • 8 oz cream cheese, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • ½ cup unsalted butter, softened (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottom with parchment paper for easy removal.
  2. Sift together the flour, cocoa powder, baking powder, and baking soda in a medium bowl.
  3. Cream the butter and sugar in a large bowl until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
  4. Mix in the vanilla extract and blue food coloring until evenly combined.
  5. Alternating with the buttermilk, slowly add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.
  6. Stir in the vinegar at the end to help activate the baking soda for a perfect rise.
  7. Divide the batter evenly between the two prepared cake pans. Smooth the tops with a spatula.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely before frosting.
  10. For the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and fluffy.
  11. Assemble the cake by spreading a layer of frosting between the cooled cake layers. Frost the top and sides generously.
