Ingredients
4 English muffins, split and toasted
4 breakfast sausage patties (store-bought or homemade)
4 large eggs
4 slices American cheese (or cheddar)
1 tbsp butter (for toasting muffins)
Salt and pepper, to taste
Instructions
- Toast the Muffins: Heat a skillet over medium heat. Spread butter on each half of the English muffins and toast them in the skillet, cut side down, until golden brown. Set aside.
- Cook the Sausage Patties: In the same skillet, cook the sausage patties over medium heat for about 3-4 minutes per side, until browned and fully cooked through.
- Cook the Eggs: Using an egg ring or mason jar lid, crack an egg into the ring on the skillet to create a round shape. Season with salt and pepper. Cook until the whites are set and the yolks are done to your preference (about 2-3 minutes).
- Assemble the Sandwiches: Place a slice of cheese on the bottom half of each toasted muffin. Add the cooked sausage patty, followed by the egg, and top with the remaining muffin half.
- Melt the Cheese: Wrap the sandwich in foil and let it sit for a minute or place it back in the skillet with a lid for 1 minute to allow the cheese to melt.
- Serve: Enjoy immediately, or wrap the sandwiches in foil for later. They also freeze well for future breakfasts!
Notes
For meal prep, you can make multiple sandwiches, wrap them in foil, and store in the freezer for up to 2 months. Just reheat in the microwave or oven.
