24 Oreo cookies, crushed
1/4 cup melted butter
16 oz cream cheese, softened
1 cup sugar
2 tsp vanilla extract
2 cups blueberries (fresh or frozen)
1 tbsp gelatin
1 cup heavy cream
1/4 cup powdered sugar
Additional Oreos and blueberries for garnish
Instructions
- Combine crushed Oreos with melted butter. Press into the bottom of a springform pan and chill.
- Cook blueberries with a bit of sugar until they form a compote. Cool.
- Beat cream cheese with sugar and vanilla until smooth. Fold in blueberry compote and whipped cream.
- Pour filling over the crust and refrigerate until set about 4 hours.
- Whip heavy cream with powdered sugar and spread or pipe over the cheesecake.
- Garnish with Oreos and blueberries. Serve chilled.
Notes
- Cheesecake can be made ahead and stored in the refrigerator for up to 5 days.
- For a firmer cheesecake, add an extra teaspoon of gelatin to the filling.
