3 cups all-purpose flour

2 cups granulated sugar

1 tbsp baking powder

1 tsp salt

1 cup unsalted butter, softened

4 large eggs

1 ½ cups milk

2 tsp vanilla extract

Food coloring (red, orange, yellow, green, blue, purple)

24 Oreos (for decorating)

1 ½ cups cream cheese, softened

1 cup sugar (for cheesecake)

3 large eggs (for cheesecake)

1 tsp vanilla extract (for cheesecake)

1 cup heavy cream (for ganache)

8 oz dark chocolate, chopped (for ganache)


Instructions

  1. Make the Rainbow Cake Layers: Preheat oven to 350°F (175°C). In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, followed by the vanilla extract. Mix in flour, baking powder, and salt. Divide batter into six bowls and add food coloring to each. Pour each color into separate pans and bake for 20 minutes.
  2. Make Cheesecake Layer: In another bowl, beat cream cheese until smooth. Add sugar, eggs, and vanilla extract, mixing until smooth. Pour into a springform pan and bake at 325°F (165°C) for 50 minutes. Let cool and refrigerate.
  3. Assemble the Cake: Start with one rainbow cake layer, spread with buttercream, and add the cheesecake layer. Continue layering until all cake layers are used. Cover with buttercream and smooth the surface.
  4. Add Ganache Drip and Decorate: Melt chocolate and heavy cream together for ganache. Drip over the sides of the cake. Top with Oreo cookies, colorful buttercream swirls, and sprinkles.
  5. Chill and Serve: Refrigerate for 30 minutes before serving to set the layers.
