16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1/2 cup raspberry jam

1 1/2 cups fresh raspberries

Crumbled graham crackers (optional, for garnish)


Instructions

  1. In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a lined 9×9 inch baking dish. Refrigerate the crust while preparing the filling.
  2. In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. Spread a layer of raspberry jam evenly over the chilled graham cracker crust.
  5. Spoon the cream cheese mixture over the jam layer and smooth the top with a spatula.
  6. Gently press fresh raspberries into the cheesecake layer, distributing them evenly.
