2 cups chocolate cookie crumbs
1/2 cup butter, melted
16 oz cream cheese, softened
1/2 cup powdered sugar
1 cup fresh strawberries, chopped
1 cup heavy cream
1 package strawberry-flavored gelatin
1 cup dark chocolate, chopped
1/2 cup heavy cream (for ganache)
Fresh strawberries and chocolate decorations for garnish
Instructions
- Crust: In a medium bowl, combine the chocolate cookie crumbs with melted butter. Press into the bottom of a 9-inch springform pan. Refrigerate.
- Filling: In a large bowl, beat cream cheese and powdered sugar until smooth. Dissolve strawberry gelatin in 1/4 cup boiling water. Cool slightly and stir into the cream cheese. Fold in chopped strawberries. Whip heavy cream to stiff peaks and gently fold into the strawberry mixture. Pour over the crust and refrigerate for 4 hours.
- Ganache: Heat 1/2 cup cream to a simmer. Pour over chopped chocolate and stir until smooth. Cool slightly, then pour over the cheesecake.
- Decorate: Garnish with fresh strawberries and chocolate swirls before serving.
