With a rich cookie crust, creamy filling packed with cookie chunks, and a vibrant decorative top, this cheesecake is perfect for any celebration or sweet craving.

Ingredients

Scale

30 chocolate sandwich cookies (Oreos), crushed (for crust and filling)

1/4 cup melted butter (for the crust)

16 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 1/2 cups heavy whipping cream

1/4 cup chocolate chips (optional)

Blue food coloring (optional, for decoration)

Extra whole chocolate cookies for garnish

Instructions

  1. Make the Crust:
Crush 20 chocolate sandwich cookies into fine crumbs. Mix with melted butter until combined. Press the mixture into the bottom of a springform pan to create a firm crust. Refrigerate while you prepare the filling.
  2. Prepare the Filling:
In a large bowl, beat the softened cream cheese and powdered sugar until smooth and creamy. Add vanilla extract and mix. Set aside.
  3. Whip the Cream:
In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture to keep it light and airy.
  4. Add Cookies to Filling:
Crush 10 more chocolate sandwich cookies into medium-sized chunks and fold them into the cheesecake filling along with the optional chocolate chips.
  5. Assemble the Cheesecake:
Pour the cheesecake mixture over the prepared crust and smooth the top. If desired, add a few drops of blue food coloring to whipped cream for decoration and pipe it around the edges. Garnish with whole cookies on top for a fun finish.
  6. Chill:
Refrigerate the cheesecake for at least 4 hours or overnight until firm.
  7. Serve:
Once set, remove the cheesecake from the springform pan, slice, and serve. Store leftovers in the fridge for up to 5 days, or freeze individual slices for later.
