Ingredients

3/4 cup cake flour

3/4 cup granulated sugar

4 large eggs, room temperature

1 tsp vanilla extract

1/4 cup rainbow sprinkles

1 cup whipped cream or frosting

2 tbsp powdered sugar (for dusting)


Instructions

 

Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.

In a large mixing bowl, whip the eggs and granulated sugar together until thick and pale. This should take about 5-7 minutes.

Gently fold in the cake flour and a pinch of salt until just combined. Be careful not to deflate the mixture.

Stir in the vanilla extract and fold in the rainbow sprinkles.

Pour the batter into the prepared pan, spreading it evenly. Bake for 10-12 minutes or until the cake springs back when touched lightly.

Immediately dust a clean kitchen towel with powdered sugar and turn the cake out onto the towel. Peel off the parchment paper.

Roll the cake up in the towel, starting from the short end, and let it cool completely.

Once cool, unroll the cake and spread the whipped cream or frosting over the surface. Re-roll the cake, this time without the towel.

Frost the outside of the roll and cover with additional sprinkles if desired. Chill for 1 hour before slicing and serving.

Notes

Make Ahead: The cake roll can be made up to a day in advance. Simply keep it wrapped and refrigerated until ready to serve.

Customization: You can switch up the sprinkles or use a flavored frosting to match your party’s theme or personal preference.

Storage: Leftover cake can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
