Ingredients

  • 6 Waffle Cones
  • 8 oz Cream Cheese, softened
  • 1/2 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1 cup Heavy Whipping Cream
  • 1 cup Strawberries, diced

Strawberry Crunch Coating:

  • 1 cup crushed strawberry cookies or Golden Oreos
  • 1 tbsp strawberry-flavored gelatin powder
  • 1 tbsp melted butter
  • 1/2 cup White Chocolate or Candy Melts, melte

Instructions

  1. In a food processor, crush the strawberry cookies or Golden Oreos. Add the strawberry gelatin powder and melted butter, then pulse to combine.
  2. In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Fill each waffle cone with the cheesecake filling. Add a layer of diced strawberries if desired.
  5. Roll the top of each cone in the strawberry crunch coating.
  6. Drizzle with melted white chocolate or candy melts.
  7. Chill in the refrigerator for 30 minutes before serving.

Notes

  • Store the cones in the fridge for up to 2 days, but they’re best enjoyed fresh!
  • If you’re prepping ahead, keep the crunch coating separate and assemble just before serving for maximum crunch.
